"A beginning is the time for taking the most delicate care that the balances are correct." Frank Herbert has Princess Irulan say this in his book "Dune". We have completed our first week in the restaurant, and as we enter our second week this quote says it perfectly. The I Ching, a classic Taoist text, counsels us to be very careful after something has been completed, that time when every thing seems to be in balance and all looks well. It's in these times that we can fail if we get complacent and allow "danger", as the I Ching puts it, in. I suppose I need to remain diligent and keep my eyes open. Don't tell the fates though, I'm going to enjoy this moment for a while.
